Chuffing Chilli

Serves 2

Ingredients

  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 20g ginger, chopped
  • 1 tsp cumin, ground
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 1 cinnamon Stick
  • 350g minced beef
  • 1 400g tin of chopped tomatoes
  • 1 400g tin of kidney beans
  • 1 tbsp tomato puree
  • 1 large red pepper, chopped
  • 2 tbsp lime juice
  • 1/4 tsp oregano, dried
  • 200ml of water

Method

  1. Fry the onion over a moderate heat for 5-10 minutes until golden.
  2. Turn the heat down low. Add the garlic, ginger, chillies and spices. Cook gently for 2 minutes, stirring all the time.
  3. Turn the heat up and add the minced beef; fry until browned.
  4. Add the tomatoes, kidney beans, puree, peppers, lime juice and oregano. and water. Mix well, bring to the boil, and simmer for 30 minutes.

Serve with rice, tortillas and a dollop or two of plain youghurt if desired.
